What we cook from:
- chicken (breast, fillet) – 500 g or whole chicken;
- celery (stems) – 2 large;
- broccoli (fresh or frozen florets) – 400 g;
- onion – 1 pc.;
- carrots – 2 pcs.;
- garlic – 2 cloves;
- leek – (take only the white part of the stem, about 20 cm;
- olive oil (can be replaced with sunflower oil) – 2 tablespoons;
- a mixture of peppers (peas) or only black – 10 pcs.;
- salt - as you like, to your taste.

I learned about this recipe several years ago, but during this time I often experimented, making chicken soup, adding green beans, cauliflower, potatoes, and various spices instead of broccoli ( bay leaf, paprika, curry), greens. Each time it turned out differently, but very tasty! Potatoes will increase the calorie content of the dish; without them, it is a dietary option.
For some reason, broccoli is not loved by everyone, it is not very common, and is often quite expensive, but sometimes you can easily afford delicious dishes with it to enrich the body with vitamins. At the same time, your menu will become more varied and fun!
Chicken and broccoli soup

Easy chicken broccoli soup
Chicken – 200-300 g, breast or thigh meat (remove fat, skin and bone);
sunflower oil– 2 tablespoons;
onion – 1 pc.;
broccoli (florets) – 400 g;
cheese (any hard type) – 50 g-100 g;
flour – 1 tablespoon;
bell pepper – 1 pc.;

The products are designed for 3 liters of ready-made soup. It is better and healthier when the chicken is boiled separately, and the chicken broth itself is not involved in the preparation. Preparation:
Boil the chicken until cooked, place it on a plate, and cut the meat into pieces.
Blanch the onion and diced tomato in oil in a frying pan for 5 minutes, add flour, stirring constantly.
We put a 3-liter pan with broth or water (2/3 full) on the fire, when it boils, add the diced potatoes, after 5-7 minutes broccoli, bell peppers, after a few more minutes vegetables blanched in the pan.

Chicken and broccoli soup (puree)
To make the puree soup light, it is also prepared with chicken and any vegetables in addition to broccoli (seasonal or frozen, it is better not to use canned ones - less useful and vinegar is almost always present, which affects the taste and smell of the finished dish, with the exception of green peas) .
What products are needed:
Broccoli soup
- chicken (fillet, breast without skin) – 200 g;
broccoli –500 g - cauliflower – 100 g.
- potatoes – 2 pcs. (if desired, it can be removed from the recipe by replacing a large number other vegetables);
- green peas - 3 tablespoons;
- zucchini – 1 small;
- pumpkin – 100 g;
- milk – 0.5-1 glass;
- salt, favorite spices, dill, parsley.
Preparation:
- Place the chicken, cut into small cubes, into a saucepan with water and cook for 10 minutes.
- Add vegetables to the broth: broccoli florets, cauliflower, potatoes cut into large cubes, zucchini, pumpkin, green peas (only if they are fresh or frozen). Cook for 10-15 minutes over low heat, remove from heat, let cool slightly.
- Grind until smooth, puree-like mass, gradually adding hot milk (and green peas, if you have canned ones). Salt and pepper.
- Before serving, add dill and parsley to the plate.
Based on the same portions of products, you can prepare creamy soup with chicken and broccoli with other vegetables that you like best. A delicious chicken and broccoli soup is made with the addition of carrots, eggplant, Jerusalem artichoke, celery, green beans, leeks, and mushrooms. If you like soup with fried onions, then try including sautéed onions in the recipe. The taste will surely be wonderful.
