- sugar – 4-5 tbsp. l.;
- coarse table salt – 1 tbsp. l.;
- vegetable oil (refined) – 5 tbsp. l.;
- table vinegar - 2 tbsp. l.;
- garlic – 1 clove;
- black peppercorns and other spices - to taste.
Let's move on to the cooking process. First add salt to boiling water, and then shrimp. When they are cooked, they need to be cooled and peeled. Next, pour everything into a clean jar. In a cup, mix oil, vinegar, granulated sugar, salt, various seasonings, cut the onion and garlic into rings, and send the resulting mass into the same vessel. All that remains is to put the seafood in the refrigerator for 24 hours - an excellent holiday appetizer is ready.
With lemon juice and dill
To prepare we will need:
- lemon juice – 80 ml;
- chopped dill – 60 g;
- salt - half a tsp;
- garlic – 3.5 tbsp. l.;
- allspice - half a teaspoon;
- sunflower oil – 2-3 tbsp. l.
Boil and salt the water. Then we put the previously defrosted and peeled shrimp in there for a couple of minutes, after which we drain the water through a colander and place the seafood in a spacious bowl. Let's move directly to the marinade. Fry the garlic in hot oil and add dill, lemon juice, pepper and salt to the pan.
Bring to readiness within 2 minutes. Pour the resulting mixture onto the shrimp. Stir and let cool slightly before placing them in the refrigerator for two to three hours. After this, the seafood will be completely ready, and you can please your family with a delicious lunch or dinner.
With soy sauce or “Korean style”
Asian cuisine is famous for using soy sauce in almost every dish. This particular recipe was borrowed from the Koreans and will not leave gourmets indifferent. Required ingredients:
- peeled shrimp – 500 g;
- soy sauce – 5 tbsp. l.;
- garlic – 3-4 cloves (to taste);
- olive (sunflower can be) oil – 3 tbsp. l.;
- lemon juice;
- cilantro (or parsley);
- hot chili pepper;
- starch;
- grated ginger – 1 tbsp. l.;
- salt.
Mix chopped garlic (2 cloves), cilantro and ginger with soy sauce. Marinate the shrimp in the resulting mixture for about 20 minutes. Heat a frying pan with oil and fry the garlic (the remaining 1-2 cloves) with pepper. Add seafood and cook on both sides for 6 minutes. Pour the almost finished delicacy into a bowl and forget about it for a while. Pour the remaining marinade into the pan and bring to a boil along with soy sauce, lemon juice and salt. Now we put the shrimp in the resulting sauce to simmer for about a minute, no longer, and you can serve.
On the grill
- sea salt – 0.5 tsp;
- crushed cumin – 0.5-1 tsp;
- olive oil (sunflower) – 2-3 tbsp. l.;
- greens (any).
Let's move on to the cooking process. In a spacious plate, mix all the ingredients (the garlic is pre-peeled and finely chopped), except for the main one. Seafood can be cooked in the shell, or without it. Only the amount of marinade changes. Whole ones will require twice as much mixture.
Pour the mixture over the shrimp, mix and leave for 20 minutes.
After this time they are ready to cook on the grill. Distribute the crustaceans on a special grill and fry for 2-3 minutes on each side, and then put them on a plate and decorate with herbs. An unusual and very tasty “kebab” is ready.
Grilled
A delicious experiment with seafood, which is suitable for a large and friendly company and will add a touch of sophistication to your vacation. The recipe consists of the following products:
- shrimps;
- lemon zest and juice;
- spices;
- garlic;
- sunflower oil;
- salt;
- salsa sauce.
Soak the crustaceans (having previously cleaned and washed them) in a mixture consisting of all of the above products, not counting the sauce, and marinate for an hour and a half in the refrigerator. After the time has passed, the shrimp can be placed on small skewers of 3-4 pieces and placed on the grill. It's important to leave short distance between the sticks for proper steam circulation. Fry the crustaceans on both sides for 3 minutes; they can be served immediately with salsa sauce.
Corn salad
Another interesting way to diversify your diet. Perfect for those who want to maintain their figure. We will need:
- shrimp – 200 g;
- canned corn – 110 g;
- tomatoes (you can use cream) – 2 pieces;
- vinegar (table, wine) – 50 ml;
- bell pepper– 1 piece;
- red onion – 1 piece;
- lemon (or lime) juice – 1 tbsp. l.;
- garlic – 3-4 cloves;
- olive oil – 40 ml;
- herbs to taste (cilantro, green onions, parsley, coriander, dill).
We marinate the shrimp using any of the above methods and pour them into a salad bowl. Peel the red onion and chop it. We remove the seeds from the inside of the bell pepper and also finely chop it. We do the same with tomatoes (only you need to remove the skin from them) and herbs. We send all this to the salad bowl. We can move on to refueling.
Mix pre-chopped garlic with oil, lemon juice and the selected vinegar.
Pour the resulting mixture over the seafood and stir carefully. Finally, you can garnish the resulting salad with cilantro or parsley of your choice.
Sea Caesar
A new take on everyone's favorite salad for particularly sophisticated gourmets. Main ingredients:
- royal crustaceans – 1 kg;
- bread for crackers;
- fresh green salad;
- vegetable or olive oil;
- hard cheese – 100 g;
- cherry tomatoes – 6 pieces;
- garlic – 1 clove.
For refueling we will use:
- eggs – 3 pieces;
- garlic - a couple of cloves;
- salt;
- allspice;
- olive or vegetable oil – about 100 ml;
- mustard – 1 tsp;
- lemon juice (or lime) – 2 tbsp. l.
First cut the loaf into small cubes and dry it a little in the oven. Pour oil into a preheated frying pan and add peeled and chopped garlic for flavor. After a minute, we begin to fry the crackers just baked in the oven until golden brown. Grind the cheese on a grater. We cut the cherry into two halves, initially rinsing it in running water. It's time to refuel. Let's start by boiling three hard-boiled eggs (we will use only yolks, crush them with a spoon). In a large bowl, mix the egg porridge with mustard, oil, lemon juice and chopped garlic. Don't forget to add salt and pepper to the resulting dressing.
Place lettuce leaves cut into relatively equal pieces in a suitable container.
Place tomatoes on top, the next layer is shrimp, and the last layer is crackers. All that remains is to pour the prepared dressing over the salad and cover with grated cheese. That's it, the unusual Caesar is ready!

Salt-fermented shrimp, or seujo in Korean, is a staple ingredient in almost all Korean dishes. There are also parallels with seujo in the culinary traditions of other nations: in Thailand and Vietnam it is fish sauce; in Malaysia - belacan (the same as seujo, only with spices); in Italy - anchovy paste and so on.
The process of making fermented shrimp is ridiculously simple and consists of one single step: salting the shrimp and then leaving them alone for several weeks or even months.
Depending on the season and the quality of the final product, Koreans use for fermentation various types shrimp.
One of the main uses of fermented shrimp is to make kimchi, in which case the shrimp are ground to a paste. They are often added to egg dishes, soups and stews. Sometimes seujo is also used as a seasoning. Many Koreans, in order not to bother with chitinous shells that are inconvenient to clean, use only fermented shrimp paste, brine formed during the fermentation process, or even replace seujo with fish sauce. However, in this latter case, it should be borne in mind that fish sauce is a fermented product, just like seujo. Its taste is noticeably different from the latter, and therefore it must be used as a substitute with caution.
Korean fermented shrimp in their whole form is often confused in some culinary sources with seujo sauce. But this is not entirely true, since in many cases the pieces of such shrimp are so large that they do not fall under the definition of “sauce” at all, and the brine I mentioned above, on the contrary, is too liquid to act as a sauce. In general, there are always enough misunderstandings with Seojo and worries for a person not initiated into Korean traditions.
A few words should be said about the shelf life of seujo. When sealed, fermented shrimp can last for months. After opening the jar, they need to be stored in the refrigerator, and this way they can also last quite a long time, without losing either their characteristic taste or bright and memorable aroma.
I don’t remember a time when I came across seujo in our domestic stores. Although he noted that they can be replaced (purely theoretically, of course!) with fish sauce, it is unlikely that a Korean chef or even an ordinary Korean layman would approve of such culinary exercises - due to the noticeable taste discrepancy between seujo and such a sauce.
You can, of course, prepare seujo at home, since the fermentation process itself does not present any particular difficulties, but the problem is that completing this task can take a long time - at least several weeks. But given how rare seujo is in our everyday cooking, does it make any practical sense? Most likely not.
In connection with the mentioned circumstance, I decided to ferment the shrimp using an accelerated method, and this is what came out of it.
Ingredients:
- 200 grams peeled shrimp
- 1.5 teaspoons sea salt
- 1.5 teaspoons sugar
- Half a coffee spoon of chili paste
- 4 tablespoons white vinegar
- 4 tablespoons water
Preparation:
- In a medium-sized bowl, thoroughly mix all the ingredients so that the salt and sugar dissolve and the shrimp are well coated with the resulting marinade. Cover with cling film and leave at room temperature for 10-12 days. We use the finished product for its intended purpose - just like seujo. Store in the refrigerator.
To cook shrimp, they are first soaked in a marinade. Marinating – best way make them melt in your mouth, juicy and tender. There are a huge number of ways to marinate shrimp. When pre-marinated, seafood meat becomes more nutritious and easier to digest in the digestive tract. The marinade envelops the meat, preventing the juice from leaking out during cooking, and prevents it from burning. Thanks to this, marinated shrimp will be not only tasty, but also healthy. All you have to do is choose the right marinade for the shrimp and the marinated shrimp recipe will turn out perfect.
Marinated shrimp recipe
Marinated shrimp will turn out very tasty if you follow all the steps in the recipe; their taste will leave almost no one indifferent. You can serve them as a separate snack or make salads. Shrimp prepared according to this recipe is ready to eat, even without additional frying.
For preparation you will need:
- about 1 kg of peeled shrimp;
- 100 ml sunflower oil without a specific odor;
- 50 g salt;
- 50 ml soy sauce;
- a tablespoon of sugar;
- half a small spoon of paprika;
- half a red hot pepper;
- a small spoon of grain mustard;
- 2 large spoons of wine or apple cider vinegar;
- half a teaspoon of turmeric;
- 4 cloves of garlic.
How to marinate shrimp:
- Pour 1 liter of water into a suitable container, dissolve the salt, boil for a couple of minutes, cool slightly. Then pour this mixture over the shrimp and leave for 30 minutes. When the time is up, drain the seafood in a colander.
- In a separate bowl, combine soy sauce, 50 ml of water, butter, sugar, spices. Place everything on low heat and bring to a boil, stirring constantly.
- Place the prepared seafood in a bowl, sprinkle with vinegar, then spread out the chopped garlic and pour over the marinade so that it does not have time to cool, stir.
- Marinate the shrimp for half an hour, cover with cling film and put in the refrigerator.
Wine based
The advantage of this recipe is that you can choose any shrimp to your taste, peeled or not, large or small, and you can also combine different ones to decorate the dish.
Wine will add piquancy to the shrimp and make the taste more refined.
For preparation you need:
- 750 g shrimp;
- salt;
- 4 cloves of garlic, cut into slices;
- ground black pepper;
- 6 – 8 sprigs of dill;
- 200 ml dry white wine;
- oil for frying, it is better to use olive oil;
- lemon for serving.
How to marinate shrimp with wine:
- Before frying, the shrimp are marinated in wine with salt, garlic and pepper, and we also add sprigs of dill. It is better to wait longer so that the meat has time to soak in the delicious, spicy marinade. To do this, it is recommended to leave the entire preparation in the refrigerator for a couple of hours.
- Remove the meat from the marinade, peel off the garlic and dill, and dry with napkins or a paper towel.
- Pour olive oil into the pan and wait until the surface heats up.
- Fry seafood in batches - each shrimp should be well fried. After each batch, change the oil to fresh one. The shrimp meat is fried quickly - a minute on each side.
It is recommended to serve the finished dish with lemon, cut into slices. It is quite easy to prepare, but it turns out very tasty, suitable for festive table. Despite the rather high cost, this seafood is so healthy that it is worth occasionally treating yourself to this delicacy.
In lemon juice
Shrimp marinated with lemon juice is perfect for the holidays. This is a delicious and simple snack.
For preparation you need:
- celery stalk, cut into large pieces;
- 1 red onion, thinly sliced;
- lemon, cut into thin slices;
- 450 g raw peeled shrimp;
- dill;
- half a glass of apple cider vinegar;
- half a glass of olive oil;
- a quarter of hot red pepper, cut into small pieces;
- thyme sprigs;
- garlic clove;
- capers with marinade - 2 large spoons;
- 2 tablespoons grainy mustard.
Preparation:
- Mix celery, half the onion, half the lemon, salt in a large saucepan, dilute everything with 4 glasses of water.
- Bring the mixture to a boil, cover with a lid, reduce heat to low, and simmer for 5 minutes.
- Now you should add the shrimp, then immediately remove the pan from the heat and cover with a lid.
- Leave to stand for 5 minutes until the meat turns pink, and then drain the broth.
- Place a dill inflorescence at the bottom of a liter jar, then layer the seafood, the remaining lemon, onion, thyme, garlic, capers and mustard.
- Separately, mix vinegar and olive oil in a glass - they will flake off, pour them into a jar with shrimp. It is necessary that the composition completely covers them. If this does not happen, you can add oil directly into the jar.
- Close the jar with a lid and marinate in the refrigerator for at least 24 hours.
- After this, the shrimp will turn into an exquisite, delicious appetizer.
The end result is a simple and very tasty dish. Marinating adds refinement to the taste. Prawns prepared in this way will help diversify both everyday and holiday menus.
Korean with soy sauce
Soy sauce goes well with any seafood. This is interesting delicious recipe shrimp marinade with soy sauce and spices. The sauce emphasizes the unusual taste and tenderness of seafood meat.
For the recipe you need:
- half a kilo of peeled shrimp;
- 5 large spoons of soy sauce;
- 3 large spoons of olive oil;
- grated ginger root; (how much? A tablespoon)
- 4 cloves of garlic;
- lemon juice;
- starch;
- cilantro, chili pepper, salt.
How to marinate shrimp for frying in a pan:
- Mix soy sauce with 2 chopped garlic cloves, add finely chopped cilantro.
- You need to marinate the shrimp in this mixture for 15 minutes before frying.
- Heat olive oil in a frying pan and fry 2 more chopped garlic cloves, pepper, then fry seafood for 3 minutes on each side.
- Place the seafood on a prepared plate, and pour the shrimp marinade into the pan for frying in a pan with soy sauce, add lemon juice, salt and bring to a boil. Place the meat in the sauce and cook for no more than 1 minute.

For preparation you need:
- 1 kg shrimp;
- a third of a glass of olive oil;
- a quarter of a glass of tomato sauce;
- 2 large spoons of wine vinegar;
- fresh basil, finely chopped;
- 3 cloves of garlic;
- salt, ground pepper.
Preparation:
- First you need to properly defrost the seafood. Place the shrimp in a sieve so that the thawing is gradual and they do not submerge in the resulting water.
- For the marinade, you need to prepare a large bowl, mix vinegar, oil, tomato sauce, finely chopped garlic and basil. Then add salt and pepper.
- The marinade for fried shrimp is poured over the meat and left for 1 hour in the refrigerator. It is recommended to cover the bowl with cling film or a lid to prevent foreign odors from penetrating inside.
- Remove the shrimp and thread onto skewers, brushing with a little olive oil for an appetizing look.
- The skewers are placed on the grill and fried on both sides until cooked through.

It doesn’t take long to cook shrimp using a grill; their aroma will delight your guests, but before frying it is important to properly marinate and prepare the seafood.
To cook shrimp marinated in soy sauce on the grill you will need:
- 1 kg peeled shrimp;
- basil and dill;
- 50 ml soy sauce;
- 100 ml pomegranate juice;
- 50 ml tartar sauce;
- half a pod of hot pepper;
- 4 cloves of garlic;
- 40 ml sesame oil;
- 30 g brown sugar.
Preparation:
- Mix soy sauce with juice, tartar sauce, sesame oil, sugar, chopped garlic, and pepper in a small container. The marinade is heated over low heat; it must be stirred constantly until the sugar is completely dissolved. Then remove from heat and cool.
- Pour the resulting spicy marinade for shrimp on the grill over the seafood and let it stand for 1 hour in a cool place. Long marinating will not harm the dish at all.
- The shrimp are strung on skewers or, if desired, placed on a wire rack. Fry on moderately heated coals for one and a half minutes on each side.
- Shrimp marinated in soy sauce with garlic and spices, served with finely chopped dill and basil.
