Well, what would football be without beer? That's exactly why, in such cases, I prepare in advance an amazingly tasty snack - chicken chips for beer, the recipe for which I will be happy to show you. This is such an interesting dish and so tasty that you should definitely try it, even if not as an appetizer for low-alcohol drinks, but just like that.
Chicken prepared in this way is very tasty; not only adults, but also children eat it with pleasure. And the cooking process, oddly enough, is quite simple - cut the chicken fillet into thin slices and marinate in spices and soy sauce for about 10-12 hours. And then, add finely chopped herbs to the meat and transfer it to paper and place it on the grill oven. This is where our work actually ended; then we just need to monitor the drying of the meat. This may take about 3 hours, so be patient and most importantly, set the stove mode to the lowest temperature - 60 degrees, then the marinated meat will dry out and turn into chips. The recipe is for 4 servings.



Ingredients:
- chicken meat (breast) – 2 pcs.,
- soy sauce – 2 tbsp.,
- pepper (hot) – 0.5 tsp,
- coriander (ground) – 0.5 tsp,
- water – 2 tbsp.,
- sunflower oil – 1 tbsp.,
- greens – 1-2 branches.

How to cook with photos step by step

First of all, we clean the meat from bones and films. Wash and dry thoroughly with a towel. And then we cut it into thin strips.

In a separate container, dilute the soy sauce with water.
Transfer the meat to a container, sprinkle with spices and pour over the sauce. Cover with a lid and place in a cool place for 10-12 hours.




Then add finely chopped parsley and a little sauce to the meat.
Grease the foil with oil and place it on a baking sheet. And carefully place slices of marinated meat on it. It is important that the pieces do not touch each other.

Turn on the oven to convection mode (if it is not there, be sure to leave the door ajar) and dry the chips at a temperature of 60 degrees for about 3-3.5 hours.

Cooking method:

1. The meat is washed, dried and cut into thin layers.
2. A dry mixture of vegetables and ground pepper are mixed in a bowl.

• a shot of soy sauce;
• the same amount of water;
• 3 g ground red pepper;
• a little coriander;

Sequence of actions:

1. The washed and dried fillet is cut into thin strips, which are laid out in layers in a deep bowl.

• 1 kg beef;

Compound

• Chicken breast (fillet) – 1.3-1.5 kg (5 pieces of fillet);

1. Soy sauce and honey marinade

• Soy sauce – 100 ml;
• Honey – 2 teaspoons;
• Ground coriander – 2 teaspoons;

Chips in a soy marinade turn out reddish-brown, while in a citrus marinade they turn out lighter.

1. How to marinate in soy-honey marinade

• Make the marinade: combine all marinade ingredients. Mix. It’s convenient to do all this right away in a marinating bowl (glass or enamel).
• Marinate: Place the breast pieces into the marinade. Stir, cover and marinate in a cool place overnight (for soy-honey marinade for ~5 to 12 hours).

2. How to marinate in a citrus marinade

• Lightly sprinkle the bottom of a glass or enamel marinating container with salt. Place a layer of meat on it. Sprinkle it with salt (as if you were just salting it to taste, no more). Sprinkle lightly with basil and mint (and garlic, if using). Sprinkle with lemon or orange juice. Then lay out the next layer, sprinkle it with salt and spices, pour over citrus juice. And do the same until all the meat is gone. Sprinkle the top of the last layer with salt and spices, and pour over the remaining juice.
• Cover the meat with a lid and marinate for 3-4 hours at cool room temperature (I placed it on a cool balcony).

There is no need to over-salt, just salt as usual, if you would salt an unsalted piece of meat on top. If there is any salt left, there is no need to use it, just enough.

When to eat and how to store

After 4 hours, the meat can already be eaten, and it reaches full readiness after 6 hours. Remove the finished meat chips from the grill, let them cool, covered with a towel or napkin. And store in bags or containers in the refrigerator.

Place the cooled chips in a plastic bag for storage.

How to use

These chips can be served festive table as a snack, take on trips or outdoors (they are well preserved at room temperature for the period of travel, along with smoked sausage), give to children at school or for a walk. You can also just snack on them instead of sandwiches or eat them while reading books (not good, of course, but many people like it that way).

The taste of joki made in a marinade of soy sauce with honey is slightly sweet and reminiscent of crab meat, while joki chips in a citrus marinade are just ordinary tasty dried chicken meat.

Other marinades for meat chips

Basically, joki can be marinated in any marinade you like. But excluding sour milk, mayonnaise and the like, since then the dried meat will not be stored well (after all important quality jocks - good storage without refrigeration).

That is, for marinating jocks you can use other spices, vinegar, wine, narsharab pomegranate sauce, sour fruit juice in different combinations. Kefir, yogurt, yogurt, horseradish sauce with sour cream, ayran, mayonnaise and the like are not suitable. When I do new option marinade, I'll add it to the recipe.

How many chips fit on 1 baking tray?

When cutting as indicated in the recipe, onto 1 rack, which fits like a baking sheet into the oven. fits 1.4-1.5 kg of chicken breast. If you have more meat and need to dry it all at once, then there is an option - tie the excess meat to the rack with twine (which is intended for baking and does not burn in the oven!) and bake it while hanging.

And under all this structure there must be a baking tray lined with paper, where the meat will drip a little for the first 5-10 minutes. Then it hardly drips anymore.

At the beginning of baking, 2-3 pieces may fall off the grill - return them to the free space. It won't fall any further.

In my oven the minimum is more than 75 degrees, so I dry the meat with the oven door slightly open (the entire cooking time). No effort is required, you go about your business, and the meat gradually turns into meat chips.
