Ingredients:
- eggs – 2 pcs.;
- flour - about one and a half glasses;
- cottage cheese - 250 g;
- sugar – 2 tablespoons;
- soda – 1 teaspoon (and vinegar to repay);
- powdered sugar.
How to prepare curd donuts:
Mix cottage cheese, sugar and eggs.
Mash everything with a fork until smooth, add soda and quench with vinegar.
Add flour little by little and knead the dough. It should turn out soft, not very steep, otherwise the donuts will be tough.
Roll out the dough on a floured table into a layer approximately 1 cm thick.
And we cut out circles, and these circles have holes in the middle. I cut out large mugs with a glass, and small ones with a lid. plastic bottle. You get cute rings. We roll the “production waste” into a ball, roll it out again with a rocker and cut out the rings.
After heating the refined sunflower oil thoroughly in a frying pan, dip the rings into it and fry until browned on one side.
Turn over with a fork - carefully so as not to splatter the oil - and brown on the other side.
We catch the crumpets from the frying pan on a paper napkin or in a colander to drain off excess oil.
Transfer the slightly cooled donuts to a plate.
And sprinkle generously through a strainer powdered sugar.

Product composition
- two glasses wheat flour;
- 200 grams of cottage cheese;
- two tablespoons of sour cream;
- two fresh chicken eggs;
- two tablespoons granulated sugar;
- half a teaspoon of salt;
- one teaspoon of baking powder.
Step-by-step cooking process
You can use store-bought cottage cheese (preferably 9% fat). Place the cottage cheese in a bowl, add two heaped tablespoons of sour cream (I use 20% fat sour cream, but you can use any other), beat in two fresh chicken eggs.
Then add salt, granulated sugar and mash with a masher into a homogeneous mass. If desired, add vanilla sugar for flavor. Measure two cups of wheat flour (250 milliliter cup) into a separate bowl, add baking powder and mix with a spoon.
Then, using a sieve, sift the flour into the curd mixture (in parts), stirring well each time. Sprinkle the table with flour, lay out the dough, knead well. The finished dough is soft and sticks a little to your hands.
We form a flagellum from it and cut it into portions. I get 15 approximately identical pieces. Roll each lump of dough into a bun, then roll them into a flat cake. Thickness is at your discretion.
Lubricate the pan using a silicone brush vegetable oil, lay out the flatbreads and fry them on both sides until golden brown.
If you want the dish to be more healthy, you can place the crumpets on a baking sheet and bake them in the oven. Immediately coat the fried donuts with sour cream, sprinkle with sugar and place in a mound. Serve and enjoy the light pastry.

Place the required amount of cottage cheese in a deep plate, mash it lightly with a fork, and beat in one chicken egg.

Add sour cream of any fat content to the main composition.

The result will be a lump of soft dough that will slightly stick to your hands. You should not strive for a perfect, non-stick dough; excess flour will make the donuts hard and dense. That is, it should remain a little sticky.
Divide the dough into several parts, place each piece on a board (sprinkled with flour) and roll out with a rolling pin, obtaining a round layer. The thickness can be adjusted at your discretion, depending on the desired result of the finished donuts. If the dough sticks too much to the rolling pin when rolling, dust it with flour on top as well.
Using a round glass or mold, make identical blanks for the donuts. Re-roll the dough scraps to create new pieces.
Heat a frying pan on the burner, pour in a small amount of oil so that the cakes do not stick to the frying pan. Before frying, be sure to remove excess flour from the surface of the workpiece, otherwise it will burn. Fry the curd donuts in a frying pan on both sides over medium heat until lightly browned. They fry very quickly, so don't go far from the stove.
